Allspice, also called clove pepper or Jamaica pepper, are the dried brown-grey berries of the allspice or clove pepper tree - a marvel of flavours made up of nutmeg, cinnamon, cloves and pepper, which is why it is also called a four-spice or allspice. Allspice can also be used as a substitute for nutmeg or cloves. Allspice is suitable for pastries as well as for hearty meat and potato dishes. In combination with bay leaf and juniper, allspice adds a distinctive flavour to marinated dishes. Allspice contains essential oils, especially eugenol, which is also found in cloves. The grains or berries are dried and thus wrinkled, dark brown and similar in size to peppercorns.
