Smoked hickory salt and chilli give the characteristic smoky, spicy flavour of US Southern cuisine. In the traditional production of hickory salt, coarse salt, often sea salt, is smoked for several days. The smoke condenses on the salt crystals. Smoked Alabama goes especially well with beef and pork.
